Here is a little Q-view, First time beef ribs, and what was left of venison cajun hot links. Ribs on a modified 3-2-1, were already singles when I bought them. I want to try beefies as a slab, but these turned out great.
 
those look kinda like our beef backed ribs we get here at our WD. I like them more than slabs to tell the truth. seem to have more meat too.
I found beef ribs don't need as much time. I usually shoot for 3 1/2 hours tops. Love to marinade them in mojo. Don't even foil them either. Beef just doesn't need as much time as pork does.

Our local Sam's will sell you baby back ribs at a reduced cost per pound if you buy them by the case. They come 6 cryopac bundles of 3 racks of ribs each in a case. I can smoke a dozen in my Big Block without using rib racks.
