This is my second go with the new smoker and thought I would do BB as well as some beans. Last week I did a butt and it was so so but a huge learning experience. This run should produce better results. My smoker is small and I made one mod to it from last week. I added a cast iron skillet so that I can better manage the wood and went from chips to chunks.

Had to cut them in half to fit the smoker.

Put them on a rib rack to help with the space issues.

So far the temp is holding steady at 250 and the smoke is going strong at 1.5 hours in to the smoke.
