Trying my first ABT smoke today. ( First gotta build a quick rain shelter ) Found a few recipies for filling here. Most have cream cheese , which I like , but also LOVE chedder . Can I use a combination of the two or would that be nasty ? Not a real big sausage guy so I was going to just cook off a little bacon and crumble that into the mix , along with possibly some green onion.
 
From what I have read here, you can stuff them with pretty much anything you want. Try what you like and see how it goes.

tanks for the link Flash. Did check that out . still wondering about combining the cream cheese and the ched. Only one way to find out ! rain shelter done ( now wont rain of coarse ) made my chili holders and gettin ready to make filling and core the peppers.
anyone ever try cutting not quite all the way thru top of pepper leaving a kinda hinge ? then closing and securing w/ toothpick ? still wrap w/ bacon of coarse .
