First swing at smoking a butt

  1. Ok gang I'm attempting my first butt smoke on my WSM and I figured I'd share with the gang since this forum has been so helpful with getting an idea where to start. I made my own rub to start testing and plan to smoke low & slow..

  4. Side note: the hit sausage is a snack. Hard to cook for hours without something to nibble on
     
  5. What temp are you smoking this bad boy at?
     
  6. Keeping it constant at 225-230
     
  7. Snacks are ready and just finished mopping. Butt internal temp at 154 degrees

    Good plan to have a snack those butts can be sneaky! Are you planning to foil or go naked and what type of wood are you using? I have never spritzed anything on the smoker are you using water in the water pan I do and it seems plenty moist in fhe WSM to me but many use sand or nothing with great results. Experimenting is half the fun after all.
     
  9. I plan to foil at 165. Then cook until 205. I have read both ways that a mop isn't necessary for a WSM but like you said experimenting is half the fun. The sausages were great but the casings got a little tough through the smoke. All in all I'm having a blast and hope the NYE visitors tonight enjoy my experiments.

  13. Dinner is at 8:30 ( assuming it hits temps and cools by then) and everyone is welcome. As far as beverages.... I have everything from bourbon to vodka to wine to craft beer.. Drinkers choice all night"

  18. Everyone loved it. I used a cider vinegar finishing sauce spiced up and no one used bbq sauce! I should have smoked more than 1 butt :)
     
  19. Nice work chief.  Yeah, I find that when I use the cider finishing sauce (got the recipe here, it seems to be used almost universally) I don't want any BBQ sauce, and guests often don't either.
