Hiya all,

After reading the forums for a while and a horrible jerky experience, I figured a fattie would be a good starting place for me. I was amazed at how good they turned out. I made 3 total, 1 pound of meat each.

- Sage sausage with sharp cheddar cheese

- Hot sausage with sharp cheddar cheese

- Ground beef with honey bbq sauce and cheddar cheese

I rolled them different sizes to experiment on which worked best. Funny thing is that they all worked great.

The ground beef was 80/20 and I did not use a binder like eggs or bread crumbs. It did not fall apart like I was worried about. The cut fattie in the photo is the ground beef.

I used a quart sized zip bag for these. In the future I will use a gallon size so I can get more of a pinwheel effect.
