First smoke. Started around 5:45, things going well for first two hours, put on two fist size pieces of hickory on the glowing bed of lump charcoal. In thirty minutes the temp spiked to 320. Used tongs to remove one of the chunks and shut down the vents to bring down temp.

Have I ruined the shoulder? I'm still going for it. My plan is to insert the meat thermo at the 5 hour mark. It's 12 degrees with no wind. Should I just stick with the Cowboy lump charcoal at this point (adding every hour or so)?
