Happy 4th of July all! Today I had the pleasure of performing my first smoke on my new Oklahoma Joe gril/smoker. I have to say the thing might not be as good as the "old joe", but boy did this thing rock. Held a rock solid temperature with minimal smoke leakage. I ditched the Kingsford and went with the HEB basic brand bricks and they ashed about half that of the Kingsford and outlasted my need for them and were still hot and holding a consistent temp! This was my first chicken smoke... Brined them for about 10 hours in kosher salt, light brown sugar and a few herbs!
