Finally got a chance to try out the mods I learned on here after several frustrating previous attempts. Ribs with what I told was called a St. Louis rub. No sauce during smoking. I tried the 3-2-1 method with apple juice in the foil. I thought I was in trouble about 5 hours into it. Smoker temp dropped to under 180 and couldn't get it to budge by adding lumps. Thought I was gonna have to finish in the oven again.

IT was stuck at 150. Called my son and he said to add a chimney of lit coals and that did it. Bumped the heat up to 240 and finished them off to a IT of 190 after 6 1/2 hours.

Absolutely the best ribs ever done in this house if I do say so. Nice smoke ring and very tender.
