Did my first smoke today with new MES. Baby backs came out very nice. I used two loads of hickory chips during the smoke and they were a little over-smoked. I'll cut back to just a couple of chunks next time.
The MES performed exceptionally well. Very consisistent termperature control. Kept within 10 degress +/- of set temperature throughout the smoke. Pull out shelves make tending the meat quite easy.
I made a dolly to move the MES in and out of the garage - 10 minute project: Bought a pre-cut 2'x2' piece of 3/4" plywood and 4 dolly wheels. Bolted wheels to board and instant dolly. No cutting required. Because my driveway is not level, I used some paint sticks as shims to level the smoker rather than fussing with the leg adjusters on the MES.
While I have done ribs that good on a bullet water smoker, the MES is much much easier and will give more consistent results.
