I have smoked ribs maybe 10 times and have had mostly good luck by my standards using a Weber gas grill and a Brinkman electric water smoker. I am trying my Cookshack Smokette Elite for my very first time. I thought I would try something I am familiar with for starters. Light rub using a slightly adapted recipe from the Weber Cola rib recipe. I bought these prior to the Cookshack so I used to have the butcher always cut them in half. Ready to go in the smoker. My old Brinkman was a fixed temp of around 250 (actually 230 to 270) so I am going to try 250 on the Cookshack. Probably target about 4 hours since they are around 3 pound racks.
