First smoke in my new mes 40!

So a couple weeks ago I ended up getting a good deal on a small propane smoker. Made a few things of jerky with it and some chicken breast. I was happy with the outcome but realized I'd never be able to cold smoke anything with it due to the temp. I've heard rave reviews about the mes 30 and 40 so I sold my propane one and was doing my research on where to buy my mes. Amazon had the 30 with no front window for 177 which I thought was a deal! Before I made the purchase I decided to check the good old craigslist and sure enough I found a used(only a few times) mes 40 on craigslist for $150! I didn't waste any time and picked it up two hours later! My first smoke today is my attempt at scar scarbelly wings with Cherrywood. I'll post the finished product in a few hours!


 
If you want crispy skin then you can try taking them off the smoker just before they are done and finishing them on a hot grill.
