First Smoke... Chicken

    I went with the reverse spatchcock method, more commonly known as the kcochctaps method.


    Olive oil and montreal seasoning and back into the fridge for an hour.

    Will keep it coming... oh, and the reverse spatchcock was me screwing up bigtime. Hope it doesn't dry outthe breasts.

    It will, but might I suggest a couple of slices of bacon laid around it?  Might help a little, besides whatever comes out the smoker will be your first smoke and that is a really great thing. I like mine whole, but really its hard to mess up a chicken. They say Hot dogs are America's food, I say it chicken. In 60+ years I have only met one person who didn't like chicken, and he was just a < clears throat here> anyway.

    Man just kick back drink in the zen of laid back and relaxed....... The chicken will be most excellent!

    Stopped the smoke... bird at 158. Heat at 300 currently.

    Stuck at 160... does chicken stall??? Heard of that in butts, but not chicken.

    It was unbelievable... thanks for the bacon idea... pretty sure that saved the bird.  It was really moist with a ton of flavor.
