First smoke - Baby back ribs

Hi all,

Newbie here, been grilling forever and decided to take the plunge into smoking b/c I could never get babybacks done the way I like them on any of my grills. Fired up the WSM on a real cold and windy Saturday with light snow showers. Not exactly optimal conditions for the fist smoke.

Oh well, got her goin with two chunks each of apple and cherry. Used the minion method with a clay saucer mod for water pan. 2.5 hours in I added Dutch's beans and went for 3 hours more for a total of 5.5 hours.

Both turned out better than I could have ever imagined even with some temp challenges, both on the hot side at the beginning and the cool side after I put the meat on.

Thanks to everyone for their words of wisdom on this site, it really is an incredible resource!
