First rib

Man those look perfect!! Do you really want them to fall off the bone? If so maybe just cook another hour in the foil would be my guess, though im not a foiler so maybe someone else could answer that better.
 
I'm with him above, those look really good.  I can see just a bit of the bone in the last pic, and it looks clean.  If you want them to just fall apart when you pick them up, increase your foiling time and be sure and put plenty of liquid with it.

I am interested to know if you added anything to the meat after the rub and brown sugar.  Did anything go on during the cook?  The outer appearance is great.
 
Nice work!  Longer cook time (in foil) with moisture (apple juice works well) = Fall of the bone.

they look tasty, are you sure they were your first ribs? my first ones didnt look that good. I foiled mine and sprayed them down good with a mixture of 1/3 water 1/3 cider vinegar 1/3 apple juice. they fell off the bone.

After each hour on for the first three hours I mopped with a mixture of maple syrup, brown sugar, apple juice, apply vinegar, butter, honey and bbq sauce. When I foiled I added just apple juice and when I unfoiled them for the last hour I poured bbq sauce on them three time during that hour and sprayed them down with apple juice in a sprayer.

And those chickens 2 had rub and 2 didn't so people could choose which flavor they wanted thats why 2 looks a bit undercooked

the foil seems to act liek a steam pouch if it's sealed up good. i'm not sure it would dry them out but i dont' think you would need to foil them that long. after 2 mine wouldnt stay on the bone enough to put back on the smoker to firm back up. I tried to grab them and they just came apart.
 
From where I'm sitting those ribs are Great.  I am also one of those that like some tug from ribs rather than fall off the bone.
 
I just had some leftover ribs for breakfast and I foiled them back up added more apple juice and put them in the oven at 350 for 20 minutes and not only do they still taste great but they were now falling off the bone.. Thanks everyone for the advice and compliment  s
 
As RdKnB suggested....extend your foil time.  The ribs do look great though!  I'm surprised you didn't have meat off the bone when you foiled for 2 hours.  My first try I only went 1 1/2 hours because I read many post here about them basically fallen off the bone at 2.  I've since dropped my foil time back to about 1 1/4 hour in the foil because I like a little tug when biting into a succulent smoked rib!  But like anything to do with smoking, it comes down to personal preference so just experiment a little to find that sweet spot you like.
 
would cooking 4 more hours after foil start to dry them out?
I think his times are 3 hours  smoke   2and1/2 hours foil  and 1/2 hour back on the grate unwrapped. Think the last number was suppossed to be .5 hrs. I was wondering about 5 hrs back on the smoker myself
 
Man, I'm jealous. Those look tasty. My last two racks have been "edible" but don't look good.

I would not change a thing.
 
Kudos on the awesome ribs!!! I find it a bit amusing that you managed to get your ribs to where i like them on your first try and my first swing at ribs were exactly what you're looking for... Life is funny like that, I guess... Keep on keepin' on, Cromag!!! Good show!!!
