First Rib Smoke With QueView

Okay so up until this point I've never whole heartedly attempted ribs. So, Here is the plan.

Prep:
Trim off the flap and excess fat

Marinate:
1/3 Cup Olive Oil
1/2 Cup Apple Cider Vinegar
1 1/2 Cup Apple Juice
1tbsp of Sea Salt
1tsp of Liquid Smoke (Hickory) Just for the flavor

Season:
Using a Mustard BBQ sauce to slather the ribs with and will apply my rub.
Wait 1 Hour for to take the chill off the ribs

i removed the Mustard BBQ and used plain ole yellow. Erain reminded me about the sugar.

Time and Temp: this is a guide not the actual
  1. 3 Hours 215-230 (Hickory and Real Oak Lump)
  2. Spritz every hour (apple juice)
  3. 2 Hours Wrapped in Foil
  4. Place on grill for 15-30Minutes
  5. 1 Hour Wrapped in Newspaper and in a cooler
any one see any flaws?

Why step 4 ?? Or just trying something new? You could just leave it on the smoker.

Okay after I wrapped them in smoked them in foil I wrapped them in paper and threw em in a cooler for 45 minutes maybe.

So, When I picked them up they snapped!!! Which I here is the so called sign to perfect ribs!!! OMG they just melted in my mouth!!! They were still sticking to the bone well enough to eat but so juicy I had to cut them then slide them on to the plates!!!

The other Menu items where as follows:

Brats
Hot Dogs
Croele Potato Salad
Mother-InLaws baked beans
Honey Corn Bread


I'm going to have to fast for the next week!
