First recipe recommendation for MES 40 (tips?)

  1. Hi all:

    Brand new super newbie here.  Just preseasoning my MES40 and am excited to try it tomorrow.  

    I have looked around in the site and seen some great recipes but wondering what you would recommend for a newbie... one likely to be easy success.

    Had my mind on chicken wings.  Couple questions:

    1) Would plan on seasoning and refrigerating for 1-2 hours?

    2) Seen some people using a brine?

    3) Saw some pictures where people put foil on their MES grates... the manual says not to do this.  Thoughts?

    4) When does one sauce?

    Really appreciate any help.  Apologies if this is somewhere else in the forums.  Couldn't find what I was looking for.
