First REAL smoke - not so hot

I really mean "not so hot". I tried smoking ribs om by new smoker (pic in my profile, cheapo) using the 3-2-1 method, but I think I was too chintzy with the charcoal, and couldn't keep the temp high enough. The ribs tasted OK, but they were kinda tough, and not fall off the bone as they were when I smoked on my gas BBQ.

Oh, well, try again. Doing a turkey breast and leg today to make smoked turkey clubs for tomorrow.
 
Keep tryin and learn from all your sucesses and failures. THis place has all the info you need, just ask, they tell.
 
Dan, don't get discouraged, everybody here has had to learn and nobody has perfect smokes every time. I keep a smoking log on each smoke so I can look back and learn from them.
