First Q-View - Drumsticks, baked beans, and corn on the cob

Alright so the title pretty much says it all. Here's some pics before cooking:

Chix was marinated overnight in olive oil and a few other things, then rubbed and let that sit for a few hours while I made the beans and got the fire goin. Smoked on hickory/apple and spritzed generously with apple cider + a little cider vinegar and worchesire sauce. Then they were sauced and sizzled on the firebox grill.

The corn I did not presoak. Just brushed with EVOO and garlic, sprinkled with salt and pepper, and then brushed on Tabasco Chipotle sauce.

And the beans are dutch's famous baked beans, with a few modifications. I basically doubled the amount of pineapple and peppers, and omitted the jalapeno or ground mustard (already ground mustard in the rub, which was also added to the beans)....plus bbq sauce.

Chix came out pretty good. There was some question as to whether or not some of it was cooked all the way through (does chicken get a smoke ring?), but it seemed ok for the most part...and I'm still alive, haha. Skin was pretty tough on some of them, not sure how to remedy this, saw a bunch of posts discussing the same issue.

Beans were of course excellent. Coulda had more smoke flavor though.

And the corn, as you can see, got a little burned. I was impatient and the chicken was already done and the corn was taking forever, so I thought I'd just direct grill it really quick in the firebox. Ok so that one piece I left on a little too long. The rest turned out great and that chipotle sauce adds a nice kick to it without it being too hot.

So that's all from this week. Next weekend, I think it's time to do some more fatties.

I'm fond of smoking chicken wings, my "tough skin" remedy is to toss them on the grill for a few minutes after smoking. Crisps everything right up. I don't see why this wouldn't work for drumsticks as well.

I had seen that mentioned on here before so that's exactly what I did. Now I know I must be on the right track..I probably just needed to leave some of the tougher ones on a bit longer.

And yes the leg/wing rack I found at Lowes. I went in for a couple digital thermometers, came out with 3 thermometers, that rack, and a bag of wood chips. haha.
 
I have found the drum stick racks at both Lowes and Home Depot. They work slick either in the smoker or on the grill. The grub looks great by the way. I think I'll do some chicken this weekend. Thanks for sharing.
 
Nice job, the chicken looks awesome too. If ya want more smoke flavor in them beans, gonna hafta leave em in at least 2 1/2 hrs to 3 hrs. When they are done, they are a bit more drier than the ones in your pic. Not trying to be critical, just helpfull. Also helps if you don't put the pineapple juice in with the pineapple!

I got a pair of them leg racks , and I like em. Spray em down good with nonstick spray first and they clean up so nice. I love the fact that they fold down flat too!
 
Well if they come out drier I'll consider it a good thing. I was surprised by how watery they were. Still good though. So I will give that a try next time....and I'll probably drain the pineapple too, haha.

Hmm, didn't think to spray them down. They cleaned up ok though. I agree, it's great that they fold flat, then I can fit them in the dishwasher, along with everything else.

Great food!!! I'm still havin trouble w/ corn - tried a bunch o ways and still not happy. gonna give yours a shot next. Looks really good.
