Diving in tonight. Picked up 2 pork butts from Win Dixxie last night.



Scored the fat cap.


Pre rub.


Post rub.


Ready for overnight in the fridge.


Loaded into MES preheated to 225 at 7 pm.


Little TBS.


Going to insert internal temp probe before I go to bed and let the Maverick and AMNPS do the work. See you in the morning!
 
Wish I slept during my first butt, it took forever and a half:). Good luck looking forward to more qview!

David, wondered how that pork price stacked up. Glad I got the card discount. Will price check against Restauraunt Depot next time.


After 6 plus hours, put in internal temperature probe which showed 136 and 142. Reloaded the AMNPS.

Best I can do on the opposite coast is Costco at $2.39/lb for boneless.  Wal-Mart will have bone-in at times for $1.79/lb but I rarely shop there. 

Smoked 17 lbs of Costco boneless butt today for a block party Saturday. There were two boneless shoulder/butts in a VacPac.

Woke up to internal temps of 165 or so. AMNPS burned all the way through during the night. Got about 5 hours of smoke out of it I am guessing. Reloaded.
 
MES struggling to get hotter than 255. Been cooking since 7pm last night. Internal temps around 185. No wrap. Thinking about finishing in oven at 275. What do you guys think?

I always just let them ride it out in the smoker. I like the bark so I don't foil them, but you could and it would finish them quick. The last 8 lb. one I did took over 24 hrs. @ 235*. I usually put them in on a Saturday afternoon for Sunday evening.
 
Thanks for the encouragement David. I ended up foiling in the oven because I had a party to go to and needed to get em done. Turned out great. I think!
