First overnighter..

    Currently in my garage going on 1:00 am..(smoker sitting just outside the garage). I bought a 8 1/2 lb brisket and have been waiting all week to smoke it. But it's been rainy and cold or I've been busy.. So I had tonight and tonight only to get this brisket in and done..

    I've got a beef rub on it, apple and maple chunks burning at about 220 and am squirting a cajun maranade every hour or so..
