If you do a search you will find a multitude of ideas, hints, and tips from some pretty knowledgeable people.

Punch in your smoker manufacturer and you will be amazed as to how many threads pop up.

Congrats on your new offset. First, burn it out to get rid of fabrication oils, etc. then, spray it down inside with Pam or some other cooking oil. Be sure to get the grates and everything coated. Start a good hot fire and let it season for a couple of hours. Play with the temps and become familiar with your cooker. Let the fire burn itself out and plan your first smoke.

Treat your smoker like your best girl friend. Take care of it and cuddle with it. It will feed you well.

Start rounding some wood up.
Fire management is a slight learning curve. But after a few cooks you should be getting onto that.
