First of Many Freaking Fatties to Come!

    I was torn as to which one to try first so I decided to do one Cuban and one Cajun.
    Hailing from New Orleans and having spent way too much time in the bars and restaurants, both as a patron and bartender, I just had to put together my version of a Cajun Fatty.
    Fresh andoullie sausage and Gulf shrimp along with sauted trinity and blackened seasoning make up the filling. I should have added a little more Louisiana hot sauce to kick it up some but overall very tasty.

    My inspiration for the Cuban came from Mamunoz. His atomic fatty looked so good I just had to make an attempt. I used jalapenos but omitted the habaneros, my pallet loves them but my butt... not so much.
    The cream cheese was the perfect compliment to the spicy peppers. I mixed chorizo with ground pork and breakfast sausage which worked really. The flavor of this fatty was outstanding!
    I'm glad I took pictures because they are all that's left!

    Oh, I forgot... I've already got the fillings one for this weekend!
