First fatty for 4th of July.

    Doing my first fatty tomorrow because I couldn't think of anything more American than a big hunk of meat wrapped in a bacon weave. Filled with spinach, mushrooms, provolone, and jalapeño. Here are pics of me putting it together, I'll wrap it in bacon and throw it on the smoker tomorrow with more pics.

    Not too bad for the first bacon weave I've ever made. Wish it was a little tighter but I'm sure it will still be good.

    And so it begins. My first cook on this ecb. No mods done at all. Hope it does OK. Seems pretty solid for the price besides this ridiculous warm ideal hot temp gauge. Thank goodness for the igrill2. We seem to be holding steady at 230-240 right now.

    Looks good Paaco.  The bacon weave looks a lot better than my first attempt. Any plated pics??
