First Butt on the new smoker w/Qview!

  1. Going to do some N.C. Chopped BBQ for the Super Bowl. Cooking close to an Eight lb roast tomorrow.

    Made some basic rub to cure overnight. 

    This is my first time cooking boneless butts. Since the wind is crazy here in the DC Area, I froze the smallest butt for a later smoke. 
     Will have more pics to share tomorrow.

  3. Wow it's cold out! Even with temperature outside, had a hard time keeping temps down.

    Used two chimneys of Kingsford Comp, Apple & Hickory Chunks


    Finally settled around 250, damper barely open.

    Surprisingly, temps are pretty even using only water pan as baffle

    SS that looks good, at that temp you may not have a big stall .

  7. Actually wouldn't mind the stall.....Kingsford Comp. burns so hot..waiting for coals to die down. Plus it's hella windy out.
     
  8. Three hour mark...


    Temperatures finally locking in lower range..ready for a long smoke filled day!


    Added a few chunks of Apple and about 5 nice chunks of lump...ready to cruise.

  11. Fourth hour...splashed with Apple juice


     Rotated and flipped fast cap up...


    Oak log on deck...like to use wood once I get things going.

  13. I know...but it was open for spritzing.....temp recovers in less than five minutes....just bark building!
     
  14. Finally finished...what I thought was the stall was a misplaced probe.

    I added a few shots along the way...




    Took it off at 196°, wrapped and will chop after making vinegar sauce!

    Should be a hit tomorrow!!

    Total cooktime was 9 & 1/2 hours.
