From Cincinnati. Just got a 30" MES for Christmas. Seasoned it earlier this week and tried it out for the first time yesterday. I did 3 racks of baby backs at 225 using pecan chips with varying degrees of smoke: 3-2-1, 2-2-1, and 5 with no wrap. My wife and we in lock step with the results. 2-2-1 didn't have enough smoke flavor for us. 3-2-1 was nice and smoky, very tender. 5 unwrapped was our favorite. More tooth to the meat but we would gladly sacrifice a little tenderness for the great smoky flavor.

Now that was a good idea for a new smoker break-in. Three cooking methods at one time. Nothing like an apples to apples test to find out what you like.

Points to you for a great choice on your first smoke. Very good and efficient method of figuring out what you like best. 5,hrs unwrapped gets my vote as well.
 
Welcome to the group!  That is an awesome first smoke!  I too like the 5 hour no wrap ribs.  I've got two racks going right now.
