So the butt I did was a huge hit with the family so I figured I try ribs! I found the sticky on trimming and it helped tremendously. I am using some store bougt rub. Its KC masterpiece bbq. Tasted on the skirt and was pretty good. I using hickory and apple chips I'm my 30" MES. So hopefully in about 5 1/2 - 6 hours it'll be finger likin' time. I'll check back in 3 hours.
