What wood did you use for the smoke?

I know this is from awhile ago, but I just found it. That looks amazing!!! All of the meals you make have me drooling on my keyboard! They also sound so fancy: medium rare smoked prime rib served with "horseradish sauce, potatoes au gratin, and roasted balsamic brussel sprouts." Like a resturant description!

Thanks! I quickly learned once I was out on my own that eating at restaurants get expensive so I just learned how to cook that way at home. I'm sure my wife would say we don't save any money with all the equipment I buy but I still like to think we are ahead of the game.

I have not tried it with venison. I am not sure what venison cut would match up with prime rib (I guess the backstrap but with the bones intact). I don't think you would get the same result with backstrap as it has zero fat.

I was thinking the backstrap too. I suppose you are right since about the fat. Darn beef fat making food so delicious! lol
