I finished my little removable table for my replacement UDS today.  Used one of those plastic cutting boards and made it so I can take it on and off. Simple eye bolt and "S" hook attachment. I am looking for a better looking lid for it, but the old one that is on there now still works perfectly. I've cooked on it a couple times already. Going to go pick up a couple boston butts tomorrow for Friday. I will debone them and cut the meat into pieces.  I love making butts for pulled pork, but I also like cutting them up so they cook faster.  I usually slop them down really good with my sauce about an hour before they are done so they have a nice carmalization of bark and sauce.  Did this a few weeks ago and it was food fit for royalty!

I do have to remove that thermometer I put on the lid.  Pretty useless in that spot.  Believe it or not, I have great luck with just a plain old long turkey frying thermometer that I can slip through the exhaust and put the tip at grate level.  I have remotes I use for long cooks over night, but that long thermometer works great!
