Any guys on here Fermenting Sausage ? I am getting interested in doing it and building a Chamber.

in for a treat if you can knock this one out, good luck and post your

Not yet but I also have a curing chamber build partially underway that I am hoping to finish up in the next month or so.
I just got a book in yesterday and am looking for a cheap upright freezer to build a chamber out of.
Bratrules has a drying chamber.... I would pm him

Hopefully In a couple months I'll be trying something along those lines too.
I am going in slow. Going to start my build on my Fermenting Chamber an doing it as I find deals on parts needed for the build. Have alot of reading to do about the process.. Would like to get some guys interested on here and kinda get a thing going together with it...
I'm in, assuming I can get the parts I need on my limited budget..

I do not have a designated curing chamber but it seems that I need to have one around as have been requested to produce a special ham that requires a temperature of 10 degrees C and humidity of 65% after doing a lot of searching and numerous links save I myself am on my way one of the best links I came across was this one
my last project was Landjäger and done without a curing chamber
Thanks for the link Brican and that Landjager looks great...Do you have instructions for making it ? I finally got my book read this weekend...The Art of Fermenting Sausage...and I now have a much better understanding of curing meats .

I would love to build one myself. So hopefully when one is built we can all copy the design.
I wish you could just buy a kit with everything you need to make one.
Yes I know what you mean Al...I have my freezer that I am going to use and I am getting the Humidifier as soon as I can find the one I want to use then the Thermostate will be next . I like the idea of doing this with a group of members on here and all of us doing a recipe together at the same time...and then working through it together...
