Wife wanted me to go to a party with here and a bunch of nurses and their spouses. I did some more mods to my smoker and wanted to try it out. So I twisted up a couple fattys. the middle one was BE maple flavored with 3 cheese sticks and a lil sweeter rub. the far laft has BE regular and sargento bistro blends sharp wisconsin and vermont cheddar with bacon bits in it, and the far right is JD with hunks of pepper jack inside. I didn't get pics after they were cut up, had to hurry cuz we wuz late! 2 1/2 hrs smoke to get to 168-170. Used all three of my remote probes, and it was neet to see how close these fatties stayed to each other even though they were in different locations in the pit. I finally am happy with the new mod of my plates. I have 250 on my big door dial, I have 245-250 on my Mav probe in the wood block, and I have 250 on my oven dial therm near my exhaust stack.
