Fatty ingredients, help me out...

I smoked my 1st fatty last night. It turned out OK but it wasn't over the top like I thought it would be. So, I'm looking for more ingredient ideas. I'm not real picky but don't like bell peppers or Jalapenos. Other than that, I'm good to go. From what I've seen around, I'm considering one made with bacon, egg and cheese. Any more thoughts?

For what its worth, when i ate a cold piece of the fatty with bacon, onion and cheese this morning, it was pretty good. Much better than what i remember from last night.

Anyway, post thoughts on other ingredients and I'll see what I can come up with for tomorrows smoke. Thanks, Greg
 
There aren't any real secrets to fatties. The last one I made I stuffed with sandwich style pepperoni (large slices), minced garlic and provolone cheese. I could see even sun dried tomatoes, mushrooms, pizza sauce or just about any other combination you can think of. I always wrap mine with bacon, not only to help keep it moist, but because I really like bacon!

Stuff the fatty with what ever you like....I do mine with cheese and onions and japs and mushrooms...............But I am also looking at other new ways to stuff them.....You can also make them without stuffing them..........I have also found that they are better to me if I let them sit for a while after I take them out of the smoker..........Just experinent with them.............
 
Wow, a bunch of quick, simple ideas. Thanks! I might go ahead and try one tomorrow with pepperoni, garlic, provolone, mushrooms and maybe a little pizza sauce. Thanks for the great ideas. I was limiting myself due to my ignorance. Thanks again, Greg
 
I just rolled a fatty that I plan on smokin in the morning. I used hash browns O briens (sorry I know you dont care for peppers) Kraft fiesta cheese and sprinkled with ground cumin.
 
I am going to smoke a couple of fatties in the morning also. One of them, I am going to put hard boiled eggs in the middle along with some sauteed onion, pepper, and white cheddar cheese. The other I may stuff with mushroom, pepper, cheese and roll in a rub wrapped with bacon. Unlimited possibilities as the others said.

this is another one that goes over well!! it has spiach, asparagus, mushrooms, onion, and cheese...

your imagination is the only thing that determines what goes in one!!
 
Thanks, thanks and thanks again. Not sure if we'll put one on the smoker today, but if not, I'll try one soon with cheese, onion, eggs and hashbrowns. I really appreciate the input. Talk to ya later, gotta get the smoker started.
 
gt, just tried the fatty that I smoked this morning with the hashbrowns and it was super. I will soon get hooked up so I can do some qview.
