hello everyone

i just made a batch of elk jerky i had the meat in the freezer from last year i used hi mtn seasoning the original blend i really like it i did a 4 pound batch here is a pic of it fresh out of the smoker

Did you use any Teriyake or Soy?
Kind of looks like it.

I'm not familiar w High Mountain.

That stuff REALLY looks great!

Is the "scale" thingy how you give points? THAT stuff ROCKS and you deserve it man! Just like Erains Rum Salmon. WOW ! (no offense to others TOO MANY to mention) I like to harvest my own meat.

Fishawn - I've eaten smoked fish most of my life.
When I was 3 - my favorite food was and STILL IS Pickled Herring!
I caught some - well - very large salmon in Lake Michigan.
Smoked em and it was one of the BEST Delicacies I've ever had the pleasure of experiencing!

WHAT cut is that and HOW did you make such nice uniform cuts o meat?
Elk is very lean and did you add any fats?
I'm friggin dyin here. THAT is awesome stuff man. PROUD be you. :)

Smoked Salmon, Trout & Steelhead is still going strong in the Pacific NW. Salmonclubber lives in one of the best Salmon & Steelhead fishing areas in the USA. They "should be" whacking & stacking them up there right now!
 
WOW, I hope you folks there in Pac NW know how LUCKY you all are.
Yes, I know Pickled Herring is MUCH different than smoked fish but I just am a fish fanatic.

Best to date is a 27 lb Northern Pike but I'd guess some of the Salmon I caught in Michigan came VERY close. VERY Close. They were HUGE 4 year olds. HUGE.

What a GREAT memory!

Ground?
Well, it looks fargin fantastic!
Ground would also allow for some fat type additives.
Elk is lean man and THAT looks fantastic!

ok i used ground elk meat it was ground with 15% beef suet so yes there was fat added to it it was made with a jerky shooter they are so nice i really like that machine and most of the hi mtn jerky seasonings are really good i use a lot of there products

i have not been out fishing much lately i have been installing a new roof on my house now its raining here so who know when i will get that job done but as soon as i do i will be out there on the ocean trying to catch a few kings before the season closes i talked to a friend last night who went out yesterday and they caught 10 kings all between 10-20 pounds nice fish they kept 6 fish and they lost one coho maybe i can get my boat out saturday

Mighty fine looking jerky! And elk no less. I'm guessing roofing (or painting or any other outside home maintenance) is a real get er done while the sun is shining kind of thing, given the climate you have.

your right about that its been raining here for three days and its been windy so i have not been able to work on the roof or go fishing so today i am gonna do some ribs and chicken and try and enjoy the day at least we got the roof all covered with felt before it rained so we are dry will post pics of ribs and chicken later
