Elk Jerky -First try

  1. I've made elk jerky many time in the dehydrator, but today I'm using my smoker. Used an elk tenderloin, in my typical marinade overnight. I'm using a fee chunks of mesquite charcoal and Jack Daniels whiskey barrel chips. 185° going on 1 1/2 hours.

  3. First time jerky smoke turned out great. Next time I'll turn the heat down a bit, but all in all I'm happy with how it turned out.
