Doing my first fatty tomorrow

    Well, I just happen to have the day off tomorrow and a chub of JD sausage in the fridge that needs to be used, so I figure I'll try my first fatty. After reading some of the posts on here, I think I'm going to try this a filling:

    Crab meat
    bacon bits
    Mozzarella and cheddar cheese
    green onions and bell peppers diced.

    Sounds pretty good to me, any comments?

    My only question is about the temperature. It seems like the general consensus is cook it to 160°, but is that the temperature of the filling, or should I keep the probe in the sausage itself?

    In the center of mass. When the filling in the center hits 160, it's done in spades.

    Your stuffing sounds good.[​IMG] What you choose to stuff it with it totally up to you. Be free, expierment with different things. There is no set stuffing for these things.
    If PBJ sounds good to you, then try it.
    Make a breakfast fatty with eggs and cheese or one like pizza with sauce and all. There are just tons of way to make a fatty. It is your to do with as you like.
