Thanks, It turned out great. For some reason it seems like it gets even better tasting after warming up the next day?? The guys at the FD thought it was pretty darn good also. I made a sandwich this morning when I got home and almost seemed to have a bit more flavor yet. I am not sure the mystery behind why it seems to get better tasting the day after, but who cares, im just gonna eat it!!

Overall I was quite pleased with how it turned out, not to say I will not tweek things a tad next time or try some finishing sauce.
 
Looks good from here.  I would think the bark would be tougher on the uncovered butt than the foiled one.  Steam usually softens them up.

Yeah the bark was a bit tougher, but still good. I actually mixed them both once I pulled them for a good mix of crispier bark and softer. Seemed to soften up anyway after rewarming it. It was just one less step and a good time to compare one covered and uncovered, and think I am going to saty with the uncovered for easier cooking. It is harder to remover from smoker though it wants to fall apart uncovered on removing from smoker.
 
Those came out really nice! My door therm does the same thing, sometimes high sometimes low. I don't even look at it anymore, I just trust my ET-73.

I just ordered an ET-732 thermometer, now I will not have to worry about inaccurate readings any more either. I will be curious how far off the door thermometer is though.....

I just checked accuracy of my oven dial type thermometer in boiling water yesterday, it was pretty close. One small issue...who woulda figured they aint waterproof

O well im out 5 bucks if it dont dry out inside, and my new one will be here by next time I use smoker anyway!
