Yeah the bark was a bit tougher, but still good. I actually mixed them both once I pulled them for a good mix of crispier bark and softer. Seemed to soften up anyway after rewarming it. It was just one less step and a good time to compare one covered and uncovered, and think I am going to saty with the uncovered for easier cooking. It is harder to remover from smoker though it wants to fall apart uncovered on removing from smoker.Looks good from here. I would think the bark would be tougher on the uncovered butt than the foiled one. Steam usually softens them up.
I just ordered an ET-732 thermometer, now I will not have to worry about inaccurate readings any more either. I will be curious how far off the door thermometer is though.....Those came out really nice! My door therm does the same thing, sometimes high sometimes low. I don't even look at it anymore, I just trust my ET-73.
