Newbie starting off smoking in Cork, Deep South of Ireland .... Thanks to the gifted and generous Bruce Kain of the Front Street Smoke House for showing me how he does his amazing brisket, pulled pork and unbelievable beef ribs.

With the help of another experienced smoker and again so generous with his time and knowledge we started up a Beelonia FIV butane smoker for the first time and smoked some damn fine chicken.

Smoke On ...

Welcome to SMF... can't say I have heard of that model, but they are all similar in a couple respects. They use wood and make Q! Enjoy, sir!
 
Cheers for the welcomes ... I had great fun in the states early this year. Went out to New York in January and eat in nearly every Pit Joint on Manahattan and even spent some quality time in the kitchen of The front Street Soke House. I went back again in March for a friends wedding in San Fran and smoked a tasty brisket for the wedding party.

I produce a pate and selling them diret at farmer's markets. I also sell top quality free range pork from 2 farms in West Cork, Gubbeen and Caherbeg.

I got a taste for smoked food from our own gifted salmon and mackeral smokers, Frank Hederman and Sally Barnes, salami and other cured meat smokers like Fingal Ferguson and Frank Krawczyk.

Canno wait to get my teeth stuck right in and getting other people here in Cork trying out real cue food
