I am going to build a curing chamber.

I need some info and pics if anyone wants to share.

I am thinking of using a over/under fridge.

    Thanks

Sounds awesome Adam, I will be watching as I'd sure like to have one some day as well.... I won't be much help on ideas.... But I'd like to see what folks say & also see what ya end up doing !

  3. Small chest freezer and the appropriate controls and such...no cutting holes...no fuss...no BS!
Up and running in about 10 minutes.

    Nice, thanks.

How do you hang in it?

  11. I hang from baskets that came with the freezer.
I plan to eventually make a wooden frame around the top of the freezer with notches cut for dowels.
Just another one of those projects I haven't gotten to yet.

Looks like a good set up. Can we assume you are just running the sensor probe into the freezer between the door and the cabinet? What's the highest temps you cure stuff at?

By far the cheapest all inclusive plug n play system I've seen.

  13. The wires that go in to the chamber (temp sensor and 12v cable for the humidifier/dehumidifier) are very small...not a problem for the door gasket.

Maximum temp I use is 50 degrees F.

What's the advantages/disadvantages to using a freezer or refrigerator? I've seen both used but no real explanation in on why one is better than the other

  15. Either can be used.
I use the chest freezer because I also make cheese, so I can fill the bottom of the freezer with cheese.
The freezer is simple, no serious issues with condensation that some folks complain about with some fridges.

  16. As of now I use an older wine fridge that has issues with condensation. I'm constantly having to open the door each day to allow new air in and what not. I've got a spare fridge in the garage already...I'm just waiting on help to get it into my basement. Then it'll become my curing chamber setup.

  17. Good Info

Good to know. Small chest freezers are cheap even new. Easier to hide under piles of stuff in the garage too!

I'd like to hear more about your cheese making Martin. have you posted that info anywhere?

  19. Good Info

  20. No, I haven't posted anything about cheesemaking in many years.
Best to get a really good good to do it right...there's a lot to know.
