OK  I read so many post about cured chicken I had to give it a try. And it was great !!!

I had told Bear that My Wife Ain't gunna eat no Pink Chicken, so I had to prepare her.

I started with 5 leg quarters , cleaned and rinsed then used Pop's Brine recipe.

Chicken in the Brine and in the Fridge for 3 days.

Today I rinsed and soaked the chicken in fresh water, for about an hour.

Removed from the water patted dry and let sit in the fridge for another couple of hours.

Took leg quarters rubbed down with EVOO and seasoned with SPOG

Got my grill going at 275 º and my trusty AMNPS 

Cooked Chicken for about 45 min.  then cranked it up to 300 º for another 15 or so min,

I would recommend Everyone give this one a try. Super Easy and worth the wait.

I still got a great chicken flavor, with a little hammy, a little and sweet flavor.

BTW   My wife Loved it, Skinned it all the way to the bone. Said several times

The color may take a little getting use to but the taste is what matters!

Didn't think I'd ever say this about chicken quarters (I prefer the white meat), and especially PINK chicken quarters, but that really looks GOOD!!   Real nice crispy skin and juicy meat.

How "hammy" was the taste?  Just a little bit or a lot?  I might just give it a try.  I know Miss Linda would love it.  Just out of curiosity, how PINK do you think a breast would turn out? Ah, what the heck, who cares--its the taste that counts.  If I found I had trouble eating pink breast meat, I could always turn out the lights and eat by feel.  LOL  

BBQ'd hammy chicken.  Now you've got me thinking,  Hmmmmm.........................

Hey Gary, It still had a great chicken flavor with just a nice mild hammy flavor with a touch of salty and sweet  I thought it was a nice balance of everything.

That was my first time, but sure wont be my last

Prep Time   3 days

Cooking time   1 hour +

And 15 min to eat it

Gary, The skin looks great, but I would need to get past the color. I'm sure the taste was good. How salty is the brine? You said it was a little hammy. Overall, a good looking cook, Joe

Hey Joe, If my wife can get past the pink color anybody can.   After you remove it from the brine rinse it and let it soak in fresh water for a while.

I still had a great chicken flavor with a slight hammy flavor with a little salty and sweet.   Not too salty at all.  A very good flavor.

Be doing it again.

I never did Chicken, but I did Turkey, and I know how good it can be.

There's a place near here that sells all kinds of Smoked stuff, including Turkey, and boy is that expensive!!!   So think of how much $$$ you're saving while you're eating Fantastic food!!

Funny you said that, last time I was at Sam's I saw Smoked Turkey legs for about $5.00 apiece   Crazy

I have had Pheasant and Turkey that were cured never had Chicken.Will have to give it a try Quarters were 47 cents this morning,I didn't buy any. LOL

Those sound good.   Chicken Leg quarters were $ .39 so I loaded up
