Cracked skin on poultry

    I'm going to smoke a 13 pound turkey, but my previous attempts at smoking poultry resulted in the skin cracking and thus shrinking considerably. Any ideas to prevent this?

    rub the hide with compound butter.... that should keep it pliable.... Dave

    Yep, what Dave said before applying seasoning rub it down with butter or extra virgin olive oil. Then rub on spices.
