Cooking Temp differences

    My Maverick remote thermometer has a set temp of 180º for cooking Chicken yet http://www.wyntk.us/food/smoking-tim...eratures.shtml says 167º. What should I use? This is a whole chicken with the back bone cut out and the whole bird butterflied open. The probe is into the thickest part of the breast.

    I would go with the 167...at 180 the breast will be dry.

    The USDA had recently dropped their rec. temp. on poultry. I don't know that it was ever 180° tho. Just Maverick or whomever making sure they din't get sued? LOL.
