Gary, to br honest it was the best butts I ever made. Ribs were good but the butts were were so tender and juicy with great flavor and perfect smoke. I only used kosher salt on the butts.

Now to finish my list to make it complete. I need to finish in the next few weeks as baseball is upon us.

Been almost 10 years i have made a few changes and today i changed out the smoke stack. Long story short I have dealt with a leaky (not bad) cc door. So a few weeks back decided to seal it off. And low and behold I could not get the CC above 165°. Cut and scraped the seal off as I was at a competition and hadn’t cooked with it sealed. Well once scraped off I could get my temps back to 250° no problem. It has no problem getting to 500° if I want it too.

The smoke stack was 3” and 36” above CC. I had to cut it down to 21” to get it in my trailer and made an exrension to go on it. So I cut the 3” out and put a 4 1/2” stack on it. I will make a 15” extension for it as well. I haven’t welded in iver 3 years and it shows. I need to practice as I will me starting a new smoker in June. Gere are a couple pics.

If your temps dropped after you sealed your door then your stack is not drawing enough and yes, you need a bigger stack.

I did cut the old stack out and put a 4 1/2” diameter stack. Had to keep the stack short to get it into my enclosed trailer. I made a 15” extension so it is 36” above cc. Here is a ouc without extension.

Did a run last week and the week before. Door is all sealed and can go from 150° to 400°. It holds temps 20-25° side to side. Thiught that was great. Use to be 50°

I mentioned above I needed to keep the stack short due to enclosed trailer. This easy on and off extension does not leak. So I won’t weld the collar to the extension. Easy to remove and stire.
