Well today i had ribs on the smoker and I have come to the conclusion that I suck at smoking meat etc. I have a brinkman vert smoker and when I put the charcoal in the thing it never went over 200 no matter what i did, so they r sitting in a vertical steel box at 200 degrees to be forgotten about and the ex to deal with. So for now I am giving up smoking meat.
 
Whoa there mick...WTF. I am sure we can figure out the issue and get you back on track. Give us some more info!!!

And whats wrong with 200 degrees? Low and Slow is the way to go.
 
4-5 hours at 200 and losing heat. i felt like i was on a sinking ship. When I checked last the internal temp was round 130-140
 
Don't give up so easly.......it all takes time and patiacents........I have been smoking for a year now and I have yet to try a rack of ribs yet......I have done country style ribs and chicken and jerky and pork chops and meatloaf and fatties.....I guess I am saying is try other things and get a feel for your smoker and see if you need to make mods to it and learn from here and from your experiences........Things will get easier as you get more comfortable with your smoker and remember be patient.......If you don't have one already, get a digital thermometer or two or three.....Don't rely on stock one on smoker..........I use an electric smoker right now, but I just got a char-griller gas grill and I added the sfb to it, so I am going to be learning how to smoker with charcoal real soon here myself....... I am not expecting everything to turn out perfect the first few time I use my new smoker, because I have never used a charcoal smoker and it has been years since I even used it for grilling, mainly growup on gas grilling......remember you can always start with smoking the meat in the smoker for awhile then finish it in the oven........You can always ask us here and someone will help you out......I just hate to see you leave discouraged on smoking............I hope this helps you out...........
 
Ex's will do that to ya. DO NOT quit. Hang in and we'll get you to rib Nirvana once you can spend a little time and attention to them... deal?
 
mick when I was a kid I fell off my bike-my dad said BOY U get back on that thing and ride-which I did-and 10 years later I had the biggest paper route in our small town.I have messed up alot more meat than broken windows in that route.and still I gonna make a mistake here and there-ain't that what lifes all about?keep smoking we will always be here for you.
 
I have tried afew times to smoke stuff and right now it seems i suck worse than a bare butt on a hot leather seat. The poor ex bore the brunt of me not being happy and she left me alone. As of now the ribs have been on the smoker for 5 hours at 200 degrees and at 140 internal temp. Last couple of times i did ribs i had to pull them out and finish them in oven.
 
Hey Mick, what town in Oklahoma? I live in Gore and could make a road trip to help you figure out what's going on. Heck, I'll even bring ribs with me if that will lessen your pain. Let me know what you think and maybe we'll make a day of it.
 
hey dude........never knew a aussie to give up so easy.............ask questions dude............patience.........have you tried other forms of meat yet............do summin easy........get some 'periecne under your belt.......some successes under your belt.......THAT will give you some confidence...........
 
oh, and dont let your ex ruin your smoking... forget about it for awhile and come back to it later, start fresh, you will learn and build confidence with your equiptment with each use.. Patience grasshopper.

Hang tough partner, anythin worth doin is worth learnin and that is where your at, we all are. Just keep at it, it will come around. Do a butt or somtin like that, they are easy, yet you get to play with them for awhile, nice and tastey to!
 
aussie, listen to the people giving you the encouragement to keep going. most of the people who responded to ur thread are who i consider part of the who's who in the smf. i am not a seasoned vet as some of these people are but i do know you need to play with ur smoker a bit whether it be a gosm,weber kettle, or a brinkman such as urs. the thing that comes to mind is ur fuel is being exhausted and not replenished soon enuff to maintain heat or proper draft control. i call it temperature management ha. one last point, i do not think ur ready to give up yet or else u wud not have started the thread. smokin is a hard habit to kick!!! we are all here willing to help.better luck next weekend!
 
If you give up now, you may never know the taste of excellent smoked ribs.Once you have smoked your own excellent ribs, you will need the ex to hold on to your feet to keep you from floating away in your own heavenly flight. You can do it. Read up a lil on some of the mods for your type of smoker, get a good therm that will give you temp at the grate where your food is. Learn fire management, even if it means a couple dry runs after work, with no food, just fire training(nothing to lose, everthing to gain). Take some temps during these trial runs, and fiddle with your smoker to tune it to what ya need.
Then you can feel more confident about your equipment,put some good meats into it, and enjoy the smoking experience, while relaxing and learning.
Too many good people on this site to let ya just fade away frustrated.We will help ya , and all we ask is, let us. Weeks from now you will be chuckling about this, and posting some good Q-views, and maybe even helping others who need it.
