I have done chuckies a few times in the crock pot.best way is to give it a lil smoke flavor first then put it in the crock pot . once its done pull everything out the crock and make a good brown gravy. place the meat in the gravy back in the crock pot and let it simmer on low. Will be some of the best roast beast  you will ever eat.

And some peeled and quartered potatoes (and sliced carrots if you like them).  I put the veggies on the bottom so they can soak up the juices, add some beef broth, and cook on low for 8-10 hours.

Is that the stuff that oozes out the bottom of my smokers?

My mom used to keep some of that stuff in the kitchen when I was a kid. Of course both my parents were from Illinois and they boiled ribs and corn-on-the-cob too...

  9. When I cook a chuck in the crock pot I go as simple as I can get it.

    Chuck roast

Mix together and pour the following over the chuck roast

    2 packs brown gravy mix

    2 packs italian dressing mix

    1 1/2 cup hot water

1 green pepper jullienned and spread over the top of the roast and "gravy'

    Cook on low 7-9 hours

The gravy is incredible.  I usually go with the low sodium brown gravy mix because the crock pot tends to intensify the saltiness in the italian dressing mix.

I'm curious about what all you threw in there with it.  I'll bet that thing was falling apart after 12 hours!
