Been on a long winters hibernation, so I thought with temps pushing 90 today, it would be a perfect day to get the MES out for a test drive. Picked up 2 chuck roasts and seasoned with Worcestershire and SPOG, and set a pan up under it to make some Au Juis. Smoking at 275 with hickory pellets in the AMNPS and the trusty mailbox mod.
Here they are all seasoned

Here's the Au Juis waiting to go in

And here they are just settled in

Thanks guys, and don't worry, I'll keep them coming. In fact here's just one of the many ingredients of the twice baked potatoes that will be joining the Chuck roasts in the smoker this afternoon.

Here they are at foiling time. Ones at 160 and the other is at 150.

I added the twice baked potatoes in the smoker to get some more flavor while the chuckies finish. The potatoes contain butter, bacon, sour cream, garlic salt, pepper, cheddar cheese, and bacon grease. Not healthy by any stretch of the imagination.

Looking good! It must be getting close to dinner time, waiting for the plated pics!Thumbs Up

And here's the final pics. The chuckies weren't as tender as I like, but I still liked them, especially with the Au Jus. The potatoes were out of this world. Sorry, not the best of pics, but I was able to snap off two. Thanks for looking!

Hahaha, I know the feeling. Mine has been under its cover since Thanksgiving. The mini is my next build, it'll be perfect for camping.

Its perfect for everyday cooking and smoking.
