Picked up a chuckie yesterday. Marinated all night in Spiedie sauce. Gonna pull it for sammies. Also trying out an Apple Pie Fattie. Here's some pix of the preparation...
This marinade is tasty to say the least. It's oil/vinegar based with a bunch of herbs & spices. I never saw it until I moved here to Rochester.
Anyway... 3 hours in, just foiled up the chuck with some beef stock & worcestershire sauce. Pulled off the fattie a while ago and am resisting temptation to cut that bad boy up... here's some qview of the fattie...
I have to give mad props to lvrgsp for the apple fattie. I tried to roll it out instead of doing a fold as suggested, and while it was good - it kind of fell apart as you can see in the pix. However, my wife loved it. Most importantly, my son loved it.
And the chuckie, well let's just say that after soaking in the beef broth/worcestershire mixture, it kind of vanished. Great sammies. This was the first chuck roast I did and it was requested that I do it again. So... enjoy the qview...
AMMJR that looks great. Smoked and shredded chuck roast is one of my absolute favorites. That's the best compliment you can get when people are already requesting that you make it again.
for your first.
...and that fatty...very nice I love that flavor combo. The sweet from the apples and the savory from the sausage. Well done.
