Chuck Steak Cutlets- which would you rather have? Qview

    Which would you rather have...rubbed, smoked & seared, or marinated and seared?

    Dry rubbed with Weber's Burgundy Beef:

    After 1-1/4 hours smoke @ 140* with Hickory, sharing the coals with marinaded cutlets:



    I opted for smoked, medium:
