Wife came home from Winn Dixie with a Buy one, get one free Chuck Roast. I had always wanted to try smoking one, so I sweet talked her out of one.
It weighed 3.58 lbs. Coated it with some yellow mustard.
Added some of Jeff's Rib Rub along with a dash of Grill Mates Steak Rub
Again I went with the ECB for more heat and faster smoking time than my GOSM. I had found out during another smoke that my ECB temp gauge was off by 65 degrees.
You can see I was even paranoid and put in a second Acurite Temp gauge to double check they were correct. This was at around the two hour mark.
Actually the wife didn't give up the roast that easy. She demanded more smoked potatoes.
At the 3 1/2 hour marked, the potatoes went on and I proceeded to wrap the roast when it had hit 165*
The potatoes were removed from the foil for the last 1/2 hour to crisp up the skin some. There will be NOTHING left of these potatoes, skin neither. I love it all.
At 205* I removed the wrapped roast and popped it in a small cooler after wrapping it in a towel. Let it set for 1 hour.
Pulled easily. Nice color and bark also. Both the wife and I were very happy.
Great dinner. Added alittle of Jeff's Rib Sauce and it was perfect. We'll be doing more of these in the future.
