Chuck Roast & CROINK Balls w/q-vue

    This past weekend, Mrs. Rivet cleaned out the kitchen freezer and handed me a platter of odds and ends to grill and smoke.

    Grilled the salmon and chicken with the goat leg on Saturday, and on Sunday, I smoked the chuck roast and CROINK balls (with the fatties) over applewood.

    Here's the chuck roast and the spicy sausage goods. Took each frozen cranberry, wrapped it into a ball of spicy ground pork, then rolled it in SHOOTERRICK'S COPPERHEAD SNAKE-BITE RUB~ awesome stuff.


    Wrapped the CROINKS in bacon, then covered them in more SNAKE BITE. The chuck got straight CBP-


    Onto the SnP smoking mushroom-swiss fatties over applewood. here they are after a while, looking real good!


    The CROINKS (CRanberry-OINK) were excellent! Better than I could have imagined for a spur-of-the-moment invention. Highly recommended after eating them...


    The chuck roast was done at 195 F Internal at the SnP, foiled and let rest for about half an hour, fourty-five minutes. Hunger was callin'! I sampled a chunk that fell off~ you can see the missing part closest to the bottom of the pic-


    The sampled part was outstanding. I pulled the remainder, but there was a section that wasn't pull-able, so I sliced it. No worries, it was a great tasting piece of local beef~


    No pics of the evening sammies, forgot to take them during the feasting, sorry. Had a fun weekend cleaning out the freezer and both barbecuing and smoking over two days. Thanks for taking the time to load and look at my work...I appreciate that. May the TBS follow you all wherever you go!

    Everything looks great. Good idea for the Croink balls. Glad they turned out so well.

    Nice work Rivet! Sounds like you had a good weekend. Congrats.

    So the Croink balls are cranberries with ground pork wrapped around them?

    Yeah...I had half a bag of frozen cranberries (not in juice or sauce, just plain) and a half pound or so of spicy Italian ground sausage from the meat counter at the grocery store where it's sold fresh. I took one cranberry (frozen) and wrapped a handful of sausage around it. About the size of a golfball. Then rolled it in a bowl of SNAKE BITE RUB. Took a slice of bacon and wrapped it around the meatball, securing it with a toothpick. Spooned some more rub over that.

    I got 6 CROINKS out of about 1/2 lb leftover sausage I'd found in the freezer. Smoked them on applewood and they were outstanding.

    The sweet/tart flavor of the cranberry went VERY well with the spiciness of the meat and in turn was complimented by the touch of sweet and hot from the rub.

    Definitely a make again.

    creation is a wonder but cranbery and pork? ill take your word one that one and will try it in the future thanks for the insight.

    Great smoke. Would of never thought of cranberry's and pork. But then again ..anything and pork is great!. Looks like a delicious meal.[​IMG]

    That looks excellent Rivet! I think cranberry goes well with pork. I've been playing around with a cran-orange sausage that will be very good once I get it perfected.

    Hmmm....I'm trying to imagine biting into a croink ball...crispy double-smoked & highly seasoned exterior...softer chew midway...then, BAM...the tart cranberry hits the tongue, casing your salivary glands to shift into OVERDRIVE!!!!!!!!!!!

    Is that a close description, Rivet?

    Man, those things gotta be good. That chuckie's got some nice smoke ring in it, too.

    Great way to help the wife with spring cleaning!!!!!!! LOL!!!!!

    Man! You have pegged it perfectly Smoke! That's exactly it, and the best part was that they are big enough to be two-mouthfuls apiece.

    No worries on the spring cleaning of the kitchen freezer...grilling and smoking are my kind of chores! She was wanting to make room for several gallons of ice cream, since my 14 & 15 year old kids are coming to visit next week for the summer.
