Christmas Spices as a Rub

    I wanted to smoke a butt or two, maybe some ABTs or a Fatty, for a Ugly Sweater party with some friends.  I have my regular rub mix I use, and love, never failed me yet....

    ...but I have a curious nature, and seeing as how this is a Christmas event, I wonder how a butt would do with your typical Christmas Spices instead of my rub.  Granted It probably would not be as good.  Just a thought.  Probably wont try it, probably wont, probably.

    Christmas Spices: cinnamon, clove, nutmeg, sage, thyme, etc.

    Well, except for the cinnamon and the cloves, the remaining spices are used in breakfast sausage, so that's proven with pork products.

    As a small test, you might try mixing a batch of "Christmas Rub" and using it on some CSRs and see how the flavor is there.  If it's good, rub a butt and rock on!

    I've been pondering a cinnamon idea as well...
  3. Ever consider using garam masala? A common Indian spice mix that contains several of the traditional fall spices you mentioned.

    Or chinese 5 spice? This also contains the cinnamon and cloves.

    Both are amazing on roasted chicken and pork!!!

    I have often thought that "Arby's Sauce"  contained cinnamon.  
    I have thought about doing it with a curry/garam combo, but garam masala might work.  I have never used the five spice though.
  5. I've used cinnamon on turkey quite a bit. It's pretty good.

    Miss Linda is of Acadian descent. When she cooks a turkey it is always filled with a meat stuffing (veal and pork). The stuffing is seasoned with cinnamon, cloves, nutmeg, and allspice. Fantastic.

    I am thinking what you are looking for might be a caribbean spice mix. really great has Cinnamin, nutmeg, cloves, ginger, maybe alspice? Gives ya some of that Latin flair. And don't forget the rum....... Zowie! I for some reason am thinking pickle juice too.

    A jamacian jerked pulled pork?

    Just an FYI, Chinese five spice is made from the following. We make it rather than buy it since we have the other ingredients on hand. It is very good on pork.

    1 teaspoon ground cinnamon
    1 teaspoon ground cloves
    1 teaspoon fennel seed, toasted and ground
    1 teaspoon ground star anise
    1 teaspoon szechuan peppercorns, toasted and ground
