Chipotle Chuckie Wonton Nachos!

This is a dish that was inspired a few days ago in a discussion about nachos with Dirt Guy.
I was going to post this as an entry for this months throwdown but forgot to add the code word.

It all started on an average day, decided I wanted to smoke a few things, while I was at the store buying meat I came across a jar of some Goya chipotle marinade, never tried it before but if it has chipotle I like it already.
So I marinated a chuckie in it then seasoned liberally with my chipotle rub. Oak and cherry, 250, wrap at 165, take to 205, rest 1 hour then shred.





Nice and spicy.
A few days later I decided to use the rest up on some nachos.
To reheat I threw the meat into a crockpot with 1 cup beef broth and the juice from a jar of pepperoncinis, it was a delicious mixtures.
Had some Wonton taco chips that I broke into smaller pieces, topped with meat, cheddar/jack cheese, melted it. Added some onions, tomatoes, jalapenos and I didn't have any lettuce so I shredded up some fresh spinach.



Those were some tasty nachos!

this post makes me feel better, last month i made that chile fattie for the contest but forgot to take a shot with the code word, so i just posted it

glad to see i'm not the only one losing their thought process
 
I love that chipotle mojo, but I've never smoked anything marinaded with it. How did it hold up to the smoke?

Man, talk about Asian-Fusion! Excellent looking nachos, Jim. As Meatball asked as well, how'd that marinade hold up, and taste after the chuckie was done?

The marinade was pretty tasty and came through nicely, though I would have liked to let it set for another 4 hours or so but afterwards besides my chipotle rub I could really pick out the marinade flavor and it gave the meat a nice chipotle bite, I'm really happy with the stuff so far, just need to try it on a few other meats for flavor comparison.
If asking if I would recommend it for marinating, yes...yes I would.
I especially love when something has a nice short list of real ingredients instead of 50 things half of which you can't pronounce.
 
Looks good! Question though, I only tried a chuckie one time and was disappointed in how much fat was in the final product. Just me, just the chuckie? Any thoughts.
 
Chuckies do contain a good amount of fat but that is part of what makes them so tasty and shred so nicely.
As for the main sections of fat, when I am shredding the chuckie I just remove those and save for my dog, she love BBQ too

You can find chuckies with less bigger sections of fat n them, just as long as you have some nice marbling in the meat sections you're good to go.
